Eri, the okami (innkeeper) of Akaishi Ryokan, has a beloved springtime ritual:foraging wild mountain vegetables in the forests and streams at the foot of Mount Fuji.
From early April, she gathers delicacies like fukinoto, warabi, and tara-no-me —seasonal treasures she sometimes adds to the meals served at the inn.
Each dish carries her quiet wish:that guests can experience the gentle breath of Mt. Fuji’s spring through its fleeting, natural flavors.
